Lentil & Butternut Squash Soup Reciipe

Serves 4

Ingredients

  • 200 g red lentils, rinsed

  • 450 g butternut squash, peeled and cubed

  • 1 large onion (approx. 150 g), chopped

  • 3 cloves garlic, minced

  • 1 tsp fresh turmeric, grated (≈5 g) or ½ tsp ground turmeric

  • 1 litre vegetable stock

  • 2 tbsp olive oil

  • Salt and pepper, to taste

  • Optional garnishes: fresh parsley, drizzle of coconut milk, toasted pumpkin seeds
